Banana Pancakes

Every day is Pancake Day!

What you need:

1 cup of flour (Any flour you like! I use wholewheat spelt flour.)

1 pinch of salt

1 banana

About a cup of water

A table spoon of coconut oil for frying

Place the flour and salt into a bowl.

Squash the banana in with a fork.

Add water - the batter has to be quite thick.

Add the coconut oil to a frying pan and turn on the heat to high.

When the oil is melted, add the batter, fry on low to medium heat for a couple of minutes until the batter has become solid enough to flip the pancake.

Fry for another 2 minutes.
