Pão de Queijo

These Portuguese small cheese rolls are deliciously salty, chewy and addictive.


Here's how to make your own vegan version!


What you need:

A blender or food processor.

A silicone muffin mould. The batter is enough for 8 muffin-sized rolls.

If you use a metal tin, make sure to grease it with oil or vegan butter.


Ingredients:

1 cup tapioca flour

1/2 cup potato starch or corn flour

1 teaspoon salt

1 teaspoon baking powder

2/3 cup plant milk

1/3 cup olive oil

1/2 cup vegan cheese (choose one with a lot of flavour, like cheddar)

1 flax egg (1 tablespoon of flax seed with 3 tablespoons of water)

How to make:

Preheat oven at 200°C

1. Blend all ingredients except for the cheese and flax egg in a blender or food processor.

2. Add vegan cheese and pulse a couple of times.

3. Add the flax egg and pulse.

4. Pour the batter into the muffin tin.


Bake for about 30 minutes depending on your oven until lightly browned. Don't open the oven door during this time.

When the 30 minutes are up, open the oven door on a crack and let the rolls cool for about 15 minutes before taking them out of the oven.
